Caramelized Fennel and Goat Cheese Flatbread | My New Roots
If you love fennel as much as I do, I can bet your tastebuds are tingling at the sight of this flatbread. I know mine did. One of the best things about this recipe is that it uses spelt flour for the crust. Spelt can be a great addition to your diet. Its best to cook with a variety of grains and flours to ensure you’re getting a wide array of nutrients from different foods. Spelt flour has slightly more protein and fewer calories than wheat flour. It’s rich in riboflavin, niacin, manganese, copper, phosphorus and fiber. It also has a much tougher outer husk than wheat which means it is protected during the milling processes and maintains its inherent nutrients and flavor. This also protects from pests and infestations which makes it much easier to grow without the use of pesticides. I can’t wait to try my hand at this… perhaps on Friday as a substitute for a meat dish during lent. Enjoy.
